A special contest was the Black Box Beef Challenge, where Ratana SEK, Demi Chef de Partie from Topaz TheCommune, took home the gold medal. His exquisite creation, roasted grass-fed USA beef tenderloin, impressed the judges with its pan-seared foie gras, mashed ‘Ksatborei’ potatoes, morel mushrooms, sautéed vegetables, and a touch of local blue cheese and Kampot black pepper sauce.

Arnaud Darc, CEO of Thalias Hospitality said : ''We're absolutely thrilled to share this amazing news - our Chef de Partie, Mr. Ratana SEK @សេក រត្ធនា, just brought home gold at the Black Box Challenge during CAMFOOD CAMHOTEL 2024!

All of us at THALIAS and TOPAZ Restaurant couldn't be prouder of his brilliant achievement. His masterful command of French cuisine, combined with his creative use of Cambodia's finest local ingredients, truly set him apart from the competition.

You should see the stunning dish he created: He perfectly roasted a USA grass-fed beef tenderloin and paired it with pan-seared foie gras. But what really made it special was his innovative combination of local and luxury ingredients - from the creamy mashed 'Ksatborei' potatoes to morel mushrooms stuffed with milky mushrooms. Add to that his beautiful medley of sautéed spinach, butternut squash, radish, Brussels sprouts, and pea tendrils, all brought together with our house-made Bleu de Prek Leap cheese and a rich Kampot black pepper sauce''.

''What makes us especially proud is how Ratana showcased both premium ingredients like the USA beef tenderloin and celebrated local treasures - those amazing 'Ksatborei' potatoes from Pursat Province and our very own Thalias-crafted blue cheese. Ratana, you continue to amaze us with your creativity and skill! We can't wait to see what incredible dishes you'll dream up next. Keep pushing the boundaries of culinary excellence!''
