This exclusive event will showcase a fusion of Cambodian and French Brittany cuisines, with a five-course menu crafted by the chef himself, exploring the concept of "Entre Terre et Mer" (Between Land and Sea).
The celebrated French chef Didier Corlou is a virtuoso of the culinary arts. Over the course of his distinguished career, he has presided over numerous esteemed restaurants and authored four celebrated cookbooks, each of which serves as a testament to his profound passion for Vietnamese cuisine and tradition.
Chef Didier's culinary journey commenced in his hometown of Hennebont, situated in the northwestern region of Brittany in France. In these settings, he encountered his earliest sources of inspiration, namely the countryside and his cherished grandmother's kitchen.
His culinary apprenticeship commenced at the age of seventeen, during which time he developed his skills in a number of French establishments. However, the lure of distant lands, with their exotic spices and abundant harvests, proved too strong to resist.
His peregrinations led him to the far reaches of Africa, Asia, and remote islands, where he crafted gastronomic delights for dignitaries, from African heads of state to luminaries in Bora Bora.
The chef ultimately settled in Hanoi, Vietnam, where he chose to establish a permanent residence. His next culinary project, set to debut at one of Phnom Penh's most renowned restaurants, promises an experience that extends beyond the typical dining experience. It will be a unique opportunity to not only savor the flavors on the plate but also to appreciate the stories, traditions, and artistry that shaped them.
