Topaz brings Marennes-Oléron oysters to Norodom Boulevard
No approximation, no local adaptation. At Topaz, French classics arrive on the plate largely unchanged — sea salt included.

The oysters
The Spéciales de Claire arrive gratinéed, set on a bed of sea salt, the way they would in a Paris brasserie. They come from the claires of Marennes-Oléron, more than ten thousand kilometres from Phnom Penh, and the distance doesn't show in the plate. Texture, brininess, the way they're served — none of it has been simplified for export.

The beef carpaccio
The carpaccio works on a different logic: a product the kitchen barely touches. The beef is sliced almost transparent and seasoned lightly — herbs, olive oil, a little Parmesan, a touch of truffle, crisp onion for texture. The point isn't to add flavour. It's to avoid taking any away.

The Mekong lobster
The Mekong lobster pushes that logic a step further. The river supplies one of Asia's most sought-after shellfish; the kitchen keeps the treatment French, down to the sauce — tomato and shellfish, bound with pasta, finished with aged Parmesan. Two origins in one dish, and neither one dominates the other.

Business Lunch: the September offer
Topaz has adjusted its Business Lunch offer for September: bring two guests and the third lunch is on the house. It's aimed at business meals and group tables — a visiting partner, a team catching up, a client worth thanking. The offer runs daily, from noon to 2pm, at both Phnom Penh addresses.
