A press lunch was held this weekend at the Rosewood Phnom Penh to celebrate the signing of an exclusive agreement between the Mayura brand - distributed by Indoguna Cambodia - and the CUTS restaurant.
Pure-bred Wagyu beef
Under the agreement, CUTS will have exclusive rights to Mayura, a premium beef brand, for Cambodia. Mayura is recognised as Australia's leading luxury beef brand and one of the country's leading purebred Wagyu breeders. Mayura Station benefits from a number of favourable conditions, including fertile hills, a moderate climate, good water and regular rainfall. The farm is located in the Limestone Coast region of South Australia, in one of the country's most sought-after agricultural areas, and its pristine environment is conducive to the production of exceptional, award-winning Wagyu beef. The brand has won more than 20 awards worldwide and features on the menus of many top restaurants.
Established in 1845, Mayura Station is one of Australia's oldest and most respected pastoral farms. Purebred Wagyu beef was imported to Australia in 1997 and, like purebred horses, the herd's ancestry, lineage and pedigree are a major distinguishing factor in the quality of their 100% purebred Wagyu beef.
Mayura cattle are fed a special diet consisting of a mixture of cereals and chocolate, which gives the meat a very special flavour.

Mayura beef is renowned for its balance of mild marbling characteristics and distinguished flavours. The high levels of marbling mean that the meat is superbly juicy and tender,” said Gauthier Bouillot, Executive Director of Indoguna Cambodia, in his presentation speech.
Bangalow Sweet Pork
For this lunch, the Rosewood also welcomed a delegation from Bangalow Sweet Pork, which has a reputation for producing the best quality pork in Australia. Bangalow Sweet Pork is supplied by small Australian family farms and encourages the use of sustainable farming practices. According to the operator, animal welfare is an extremely important part of their business, as ‘any stress experienced by the pigs at any time in their lives can have a significant impact on the quality of the product’.
The fat content of Bangalow Sweet Pork has been tested by CSRIO and the results show that it is predominantly unsaturated, at over 60%. This fat profile is the basis of the unique flavour and tenderness, which compares favourably with other meats, including most pork available in Australia.
Discovery menu
For the occasion, the CUTS team had prepared a particularly tasty menu, featuring of course Bungalow Sweet Pork and Mayura beef.
A generous tasting session that ended with an original and particularly delicious dessert, a cheesecake with apricot compote and gel, vanilla cream, crumble, passion fruit and mango.
